Spinach Ricotta Pie

Spinach Ricotta Pie
1/2 box ( 8 oz / 227g ) Notta Pasta1/4 cup finely chopped Italian parsley 

Salt and pepper, to taste

1 Tbsp olive oil

1 medium onion, minced

3 cloves garlic, minced

1 – 10 oz (280g) package frozen chopped spinach, thawed & squeezed dry

4 egg whites

1 – 15 oz (425g) container part-skim ricotta cheese

1 tsp salt

1/2 tsp nutmeg

1/2 tsp pepper

2 Tbsp parmesan cheese

1 Preheat oven to 350?F (175?C). Lightly oil a 9? pie plate.
2 Boil Notta Pasta according to box directions. Rinse under cold water and drain well. Immediately toss with parsley, salt and pepper.
3 Pour mixture into pie plate. Spread evenly on bottom and up sides of pie dish to form a shell.
4 In a non-stick skillet, heat olive oil over medium-high heat. Add onion and garlic. Saut? until softened. Mix in spinach, and set aside to cool.
5 Beat together egg whites, ricotta cheese, salt, nutmeg, pepper, and parmesan cheese.
6 Stir into spinach mixture.
7 Spread evenly in shell. Bake 40 minutes or until set.
8 Serving suggestion: Serve warm topped with your favorite spaghetti sauce.

Salata me Spanakofeta (Beet & Spinach Salad
2 eggs yolk hard-cooked
1 egg yolk raw
1/3 cup olive oil
2 tablespoons lemon juice fresh
1/4 teaspoon oregano dried, crushed
Salt and freshly ground pepper to taste
2 cups celery chopped, chilled
1/2 cup walnut coarsely chopped
4 ounces feta cheese
1/2 pound spinach fresh leaves, washed and trimmed
2 cups beet cooked sliced, chilled
Walnut halves
Put hard-cooked yolks through a sieve; add to raw yolk with olive
oil and lemon juice. Beat with a wire whisk or purie in blender
until creamy. Season with oregano, salt, and pepper. Place celery
and walnuts in bowl. Cut 2 ounces feta cheese in cubes and add to
bowl. Pour dressing over mixture and toss lightly. Line serving
bowl with spinach leaves. Cut remainder of spinach into strips and
place in center of dish. Mound celery mixture over spinach and ring
with slices beets. Cut remainder of feta cheese into julienne strips
and use with walnut halves to garnish salad.

Easy Spinach Casserole
2 (10 ounce) packages frozen chopped spinach
1 (8 ounce) package cream cheese
1 teaspoon seasoning salt
1 cup dried bread crumbs, seasoned
In a mixing bowl, combine spinach, cream cheese and seasoning salt. Mix well and spoon into 2 quart casserole dish.
Sprinkle with bread crumbs and bake at 350 degrees F (175 degree C) for 20 minutes.

* 1 bunch spinach, washed and torn
* ½ red or sweet onion, thinly sliced
* 5 mushrooms, sliced
* 3 T. vegetable oil
* 2 T. cider vinegar
* 2 tsp. brown sugar
Place the spinach, onion and mushrooms in a bowl. Whisk together the oil, vinegar and sugar until the sugar is melted, pour over the salad; toss and serve.

Smoked Salmon and Spinach Salad with Avocado

Smoked Salmon and Spinach Salad with Avocado
1/2 lb fresh baby spinach
2 ripe avocados
1 tbsp lemon juice
3 tbsp olive oil
1 tbsp balsamic vinegar
Salt and freshly ground pepper
1/4 lb sliced smoked salmon
1 tsp finely chopped tarragon
Finely shred the spinach. Mix together olive oil, balsamic vinegar, tarragon, salt and pepper.
Halve avocados. Remove stones, peel and chop. Toss with lemon juice.
Cut smoked salmon into strips.
Toss together spinach and olive oil dressing. Gently fold in avocado and smoked salmon. Serve.

* 1 bag (9 oz.) Fresh Express Spinach
* 3 kiwi, peeled & sliced
* 1 pint strawberries, sliced
* 1 handful, chopped macadamia nuts (optional)
* ****
* 1/4 C. vegetable oil
* 2 T. raspberry vinegar
* 2 T. raspberry preserves
Mix dressing ingredients and refrigerate for 15 minutes. Toss together spinach, strawberries, kiwi and nuts. Drizzle with dressing and serve. Makes enough for 4-6.

Cheese Spinach Bake

Cheese Spinach Bake
2 (10-ounce) packages frozen chopped spinach
1-1/2 cups small curd cottage cheese
4 ounces Cheddar cheese, shredded
1/4 cup butter, softened
3 eggs, beaten
2 teaspoons flour
Salt and pepper to taste
Cook the spinach using package directions; drain.
Combine the spinach, cottage cheese, Cheddar cheese, butter, eggs, flour, salt and pepper in a bowl and mix well. Spoon into a greased 1-quart baking dish.Bake at 350 degrees for 1 hour.



Alaskan Spicy Spinach Dip

Alaskan Spicy Spinach Dip
2 pounds pepperjack cheese
2 cups half-and-half cream
1 large tomato, diced
1 onion, diced
1/2 cup diced red bell pepper
3 cups spinach, rinsed and chopped
Over a double boiler slowly melt the pepperjack cheese. When the cheese is melted whisk in half and half until smooth and creamy. Stir in tomato, onion, red bell pepper and chopped spinach. Transfer to a serving bowl. Serve warm with tortilla chips or bread.
